Red Quinoa Salad

Red Quinoa Salad: red quinoa, bell pepper, scallion, tomato, avocado, arugula, feta, lemon juice, olive oil. 

Make it again? Yes, it was fresh, healthy and light.
Improvements: Use an avocado that is almost ripe, that way it will be perfect for leftover the next day, not too mushy.

  1. I recently had a dish like this when I was in SF at this creepy vegan restaurant and I LOVED it! I also love making a salad like this and adding nuts. I am going to try your yummy looking combination. I am obsessed with quinoa, in fact I just had it for breakfast with the yummy spices you gave me as a side to my eggs.

  2. Why was the restaurant creepy? I agree, quinoa is a miracle food. It's so tasty! And, I was reading in Real Simple today that it is a 'complete plant-based protein,' which apparently means it contains all nine essential amino acids. A 'perfect' food.
